Confessions of a Health Blogger 1 + Spiced Almond Butter Recipe

My friends often tell me ‘you’re so motivated‘ or ‘I couldn’t eat like you all the time!‘. But the truth is I’m not always motivated and I don’t eat super healthy all the time.

Okay, so you won’t find me down the chippie at 2am on a Friday night after drinking a half a bottle of vodka and in bed on saturday morning sleeping off my horrendous hangover (those days are well and truly behind me). But I’m only human and sometimes 1 brownie turns into 3 (or 4) or I’ll cancel my gym class to hang out with my friends.

With that in mind I’ve decided to start a new feature called ‘confessions of a health blogger‘.

Consession 1

I ate half a jar of almond butter and it was fantastic.

Almond butter has been really expensive lately so I haven’t eaten much for a while. But I really wanted some so I decided to treat myself to a jar.

As soon as I got home it was kettle on (to make a cup of tea- a very British thing to do!), jar lid off and spoon at the ready. I savored that first taste, but then before I knew it I’d mindlessly eaten a little under half the jar #sorrynotsorry.

I know that a portion size is 2 table spoons, but sometimes I like to live on the edge and eat more. As long as you’re not doing it every day it’s not really a problem. Everything in moderation as they say.

When I’m not spooning it straight from the jar, I love to make spiced almond butter and eat it on corn thins with a portion of fruit- figs, banana and berries work really well.

Spiced Almond Butter Recipe

Serves 1

Ingredients

  • 2 tbsp almond butter (I recommend pip & nut or meridian)
  • 1/2 tsp agave syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1-2tsp boiling water

Method

  1. Mix all of the ingredients together and then spread onto corn thins, stir into your porridge or just enjoy it straight up. If it doesn’t want to mix try adding a little bit more water.

      Thanks 🙂 I just wanted to make my contribution to showing that social media can give an idealistic view of people’s lives. I know I’ve spent a good amount of time in the past trying to live up to unrealistic standards that I saw on social media and it made me really unhappy. It makes me sad to think that other people would be going through that.

      I saw your reply on HBloggersCom- it would be lovely if you contributed when you’ve got time or feel you have something important to ‘confess’.

      Glad it’s not just me 🙂 I’d say almond butter + dates is even more addictive than almond butter by itself! Especially if the dates are all nice and gooey!!

    Oh yes and my confession is I don’t always even get as far as a spoon! My favourite is celery or apple or both and peanut butter. And Nairns gluten-fee oatcakes. And in a smoothie. Better stop now…

    Hahaha I was all ready to comment on this after seeing today’s tweet and lo and behold I already have! But, I have another way to eat peanut butter, discovered yesterday by doubling the original amount in the Chewy Chocolate Chip Banana Cookies, and I don’t care what anyone says, I had TWO for breakfast this morning (after a morning juice) AND (whispering) I put some extra pb on one of them

        Mmm tiger nut mylk, yes, you’re right. I’ve run out of tiger nuts and waiting for Ani to return from hols to place my order. Good call ☺️ I often wonder how you have enough hours in the day for your creations when you have uni too. Hope all’s going well
