Lemon & Chia Seed Oatmeal with Fresh Figs

These lemon and chia seed oats are a take on the traditional lemon and poppy seed pairing. Chia seeds kind of look like poppy seeds right?

The oatmeal contains only 5 ingredients but is packed with flavour. Plus, thanks to the whole grain oats, fruit and chia seeds it is very nutritious and filling.

Serves 2
1 of your 5-a-day

Ingredients

  • 1 cup rolled oats
  • 1 ½ cups boiling water
  • 1 cup oat milk (remember to shake the carton before you pour it)
  • 2 tbsp chia seeds
  • ½ – 1 lemon (juice only)
  • Optional: ¼ tsp vanilla powder, 1 tsp cinnamon
  • Toppings: Fresh figs

Method

  1. Transfer the oats and boiling water to a pan and stir for about `1 minute until the oats have absorbed most of the water and become creamy.
  2. Turn on the heat and add the oat milk and chia seeds. Cook for 4-5 minutes until the chia seeds have swelled up and the oatmeal has become thicker.
  3. Turn off the heat and leave the oats to cool down for a few minutes. Next stir in the juice of half a lemon and optional vanilla powder and/or cinnamon. Taste the oatmeal and add extra lemon juice if desired.

      Thanks Donna. It’s so easy to just put a spoon into porridge or whatever you are making for breakfast – I’ve seen people eat them on yogurt and even toast!

      Haha – I do find my bag works its way to the back of the cupboard and I forget to use it sometimes! But it’s so easy to add a spoon to your breakfast.

    This is so creative! I love lemon and oatmeal but never had it together :)) Can’t wait to try it! I love lemon bc it always give everything a fresh taste, so I’m sure this will be great :))

      Hey Jess. Thank you for your comment. The first time I tried it was because I was making overnight oats with pear and I didn’t want it to go brown by the morning! But it worked well and I thought I’d try it in hot oats.

    This looks so good, I absolutely want to try it! Porridges are really perfect for breakfast – nutritious and healthy. I just made a coconut raspberry porridge, using coconut milk instead of oat milk and it was really good! The recipe is on my website, it’s very easy and quickly made – perfect for the morning, like your recipe!
