Raw Vegan Millionaire Shortbread Recipe

What sets this recipe apart from any similar is the delicious roobois caramel! It really adds to the flavour to make this recipe different from any you have tried before.

Millionaire Shortbread with Date & Roobois Caramel Recipe

Serves: 8-10 slices.

Ingredients

Base Layer

  • 80g blanched peanuts
  • 60g rolled oats
  • 4 large medjool dates
  • Seeds from ¼ vanilla pod

Caramel Layer

Chocolate Layer

  • 50g raw virgin coconut oil (used refined for a less noticeable taste)
  • 30g cacao powder
  • 25g maple syrup

Method

  • Prep: Brew the tea in the boiling water for 5 minutes. Removed the tea leaves and soak the dates in the liquid for at least an hour.
  • Base: Mix all of the ingredients in a blender or food processor for around 2-3 minutes or until the mixture forms a ball.
  • Transfer the mixture to a loaf tin lined with baking paper. Then press the mixture down with your fingers until it forms an even layer at the bottom of the tin.
  • Caramel: Blend the dates, rice milk and 15ml of liquid from soaking the dates until it is smooth. Spoon the mixture on top of the base layer and smooth it until it is evenly distributed. Place the tin in the fridge.
  • Chocolate: Melt the coconut oil in a pan then turn off the heat. Stir in the maple syrup vigorously until it is incorporated. Finally mix in the cacao powder. Spoon the chocolate on top of the caramel then place in the fridge for at least 2 hours to set.
  • Store in the fridge. Remove the millionaire’s shortbread from the fridge and leave at room temperature 5 minutes prior to cutting and serving.

This recipe uses Roobois – a redbush tea with a slightly nutty flavour. But you can use any tea that you think would enhance the flavour of the caramel for example, one with vanilla flavours.
