Superfood Mince-Apple-Pie Compote

Mince-Apple-Pie compote‘ was born from my love of mince pies and love of apples. The cinnamon and mixed spices give it the pure taste of Christmas and I have no doubt you’ll love it!!

It’s vegan, gluten– and refined sugar- free. The compote is also packed with super food ingredients (like chia seeds and mulberries) to give you a boost of vitamins and minerals.

If that hasn’t convinced you, let me tell you that this recipe is  grandma approved!

So put on your pinny and let’s get cooking.

Serves 8

Ingredients

  • 2 red apples chopped into tiny pieces
  • 1 cup boiling water
  • 3/4 cup raisins or sultanas
  • 1/2 cup dried mulberries
  • 1/4 cup goji berries
  • juice of 2 oranges
  • juice of 1/2 lemon
  • 2 tbsp chia seeds
  • 1/2 tbsp date syrup
  • 2 tsp cinnamon
  • 1 tsp all spice
  • 1 tsp mixed spice

Method

  1. Put all of the ingredients in a pan and stir until it starts bubbling
  2. Reduce the heat and cook for 20 mins until the apples are squishy
  3. Dollop on top of yogurt or porridge or eat straight from the jar 😉

This would be lovely to add into your breakfast porridge/smoothie or even add into a sandwich. But I don’t think it would bake well in mince pies because the apples might let out more moisture… and you don’t want a soggy bottom! You would want to cook the cakes and lids separately then assemble them.

Did you know….

Santa would be very happy if you left him a jar of Mince-Apple-Pie compote to take back to Mrs Claus. I think he gets a bit sick of traditional mince pies or milk and cookies.

    Great minds, just putting together a raw Christmas pud post I love this combination and we have some Bramleys that need using up, would be good in baked apples
