I think I’ve made THE BEST ACAI BOWL RECIPE EVER. Honestly, I ate every spoonful of this homemade acai bowl thinking ‘yuuuuuuum, this is so good’.
In the first acai bowl recipe posted on the blog (which is yummy, don’t get me wrong, but the new one is AMAZING) I described how I like to use frozen berries in my acai bowl to bulk it out and add antioxidants. This means that I can use less acai powder, which is good because acai powder can be expensive.
For version 2.0 I decided to use frozen purple grapes. I picked them out of a pack of frozen ‘forest fruits’, but you could just freeze your own. Until now I have been quite apprehensive to use grapes in smoothies because I once read that blending the skin can make your smoothie bitter. But that fear was totally unfounded in this case. The smoothie was deliciously sweet.
I’ve also included some Nutribrex, which is a gluten-free cereal bisk made with sorghum (read more here). I used the ‘Coconut & Crispy Rice Nutribrex’, so if you don’t have this and try to use a different cereal you might want to add a teaspoon of coconut flakes and little shake of cinnamon.
The cereal will help to make the smoothie bowl more filling and slow down how long it takes for it to digest. I added this because a few people that I have spoken to recently have said they don’t want to make smoothie bowls because they think they will get hungry soon after eating it. Adding the slow release carbohydrates from the Nutribrex should help to prevent this problem.
3 of your 5-a-day
- 1.5 frozen bananas
- 1 cup frozen grapes
- 2 Coconut & Crispy Rice Nutribrex
- 1 tbsp acai powder
- ½ + cup of rice milk (enough to make it your desired consistency).
- Toppings: 1 portion (80g) of mixed fruit and a few seeds.
- Blend the fruit, 1.5 Nutribrex, acai powder and the rice milk.
- Transfer to a bowl then add fruit toppings and the rest of the Nutribrex.
