Don’t you hate it when you’ve almost finish your jar of peanut butter and you just can’t get the last little bit out?

I do, that’s why I always make overnight oats in my peanut jar.

How to make overnight oats

To make the overnight oats all you have to do is add oats, milk and any protein powder or flavourings you would like to your almost empty peanut butter jar and leave it in the fridge overnight. The oats will expand and then when you stir it in the morning they will help to wipe the peanut butter from the side. This means no more wasted peanut butter – yay! Also you can use this trick with any kind of nut butter.

Overnight oats super quick and easy. They’re great for if you don’t have much time in the morning.

Today I want to share with you a super special recipe for peanut and butternut squash overnight oats. I made it a while ago and put the recipe on my instagram but it deserves a blog post of its own because it was so yummy and I love sharing ways to add vegetables to your breakfast. So far I have shared breakfast recipes using courgette, carrot, cauliflower, beetroot and radish! But never butternut squash!

Adding butternut squash to your overnight oats helps to make them nice and sweet. It also adds vitamins such as A and C to support your immune system – very important as we approach winter.

PEANUT & BUTTERNUT SQUASH OVERNIGHT OATS RECIPE

Ingredients
Serves 1
(3 of your 5-a-day)

  • 1 cup hazelnut milk*
  • ½ cup oats
  • ½ – ¾ cup roasted butternut squash
  • 1 tbsp maple syrup
  • 2 heaped tsp chia seeds
  • 1-2 tbsp leftover peanut butter in your jar
  •  Toppings – ½ cup strawberries, 1 banana (and perhaps a homemade peanut butter cup).

Method

  1. Roast the butternut squash until it becomes caramelised (about 30-40 minutes at 180°C). Then mash it with a fork.
  2. Add all of the ingredients to the peanut butter jar and mix well.
  3. Leave the jar overnight in the fridge so that the mixture will thicken.
  4. In the morning you can transfer the oats to a bowl and add the banana and strawberries to the top. Or you can grab the jar and eat it on the go.

*I have made the recipe using Rude Health hazelnut milk and rice milk and hazelnut was by far the best! It’s worth trying to find some and spending the extra money on it.
