It’s two weeks after the Christmas break and I’m already looking forward to my next holiday. Hopefully somewhere tropical. If you’re feeling the same, why not make this Piña colada porridge to brighten up your morning?

This porridge will warm your tummy and could even help keep colds, flu and ear infections at bay. Pineapple contains over 60% of your recommended daily dose of vitamin C, which helps strengthen your immune system.

This recipe is a bit different to others you might see because I’ve used coconut oil and desiccated coconut rather than coconut milk to flavour it. I find that if I open a can of coconut milk and only use a bit, I will forget about the rest and it sits in my fridge until it goes off! So with this recipe that problem is avoided.

pina colada porridge

Serves 1
2 of your 5-a-day


  • 1/2 cup rolled oats
  • 1/2 – 3/4 cup rice milk
  • 1 tsp coconut oil
  • 2 tbsp unsweetened desiccated coconut
  • 1/2 cup pineapple
  • 1/2 cup berries


  1. Heat the oats, milk, coconut oil and 1 tbsp desiccated coconut in a pan for about 4 minutes or until it reaches your desired consistency.
  2. transfer to a bowl and top with the remaining desiccated coconut and fruit.
