‘Mince-Apple-Pie compote‘ was born from my love of mince pies and love of apples. The cinnamon and mixed spices give it the pure taste of Christmas and I have no doubt you’ll love it!!
It’s vegan, gluten– and refined sugar- free. The compote is also packed with super food ingredients (like chia seeds and mulberries) to give you a boost of vitamins and minerals.
If that hasn’t convinced you, let me tell you that this recipe is grandma approved!
So put on your pinny and let’s get cooking.
1 of your 5-a-day
- 2 red apples chopped into tiny pieces
- 1 cup boiling water
- 3/4 cup raisins or sultanas
- 1/2 cup dried mulberries
- 1/4 cup goji berries
- juice of 2 oranges
- juice of 1/2 lemon
- 2 tbsp chia seeds
- 1/2 tbsp date syrup
- 2 tsp cinnamon
- 1 tsp all spice
- 1 tsp mixed spice
- Put all of the ingredients in a pan and stir until it starts bubbling
- Reduce the heat and cook for 20 mins until the apples are squishy
- Dollop on top of yogurt or porridge or eat straight from the jar 😉
This would be lovely to add into your breakfast porridge/smoothie or even add into a sandwich. But I don’t think it would bake well in mince pies because the apples might let out more moisture… and you don’t want a soggy bottom! You would want to cook the cakes and lids separately then assemble them.
Did you know….
Santa would be very happy if you left him a jar of Mince-Apple-Pie compote to take back to Mrs Claus. I think he gets a bit sick of traditional mince pies or milk and cookies.
Let me know if you give this recipe a go.
