Quick & Easy Banana Porridge with Warm Berries

The title banana porridge with warm berries pretty much sells itself as a delicious breakfast. But this recipe is also super easy to make in a microwave and takes under 10 minutes. It’s a perfect hearty and comforting breakfast to make on any day of the week.

It’s getting to the time of the year when my instagram feed is filled with pictures of porridge- some of them healthy, some of them not-so. That’s why I want to share with you one of my favourite porridge recipes EVER. It’s sweet and satisfying from the banana and warm berries, but contains no refined sugar. Add on a drizzle of nut butter and you’ve got yourself a tasty and balanced breakfast- carbs, protein and healthy fats.

I’ve told you about the banana trick before, but in case you missed it let me explain again. I don’t know the science of it, but adding mashed banana to your oats makes it grow in volume and gives it a really creamy texture.

Have a go and let me know what you think.

Maybe I should make a banana-berry-breakfast challenge and see who can make this porridge in the quickest time! Post your time in the comments below and add your photo to instagram or my facebook page.

easy porridge recipe with banana and berries

Serves 1

2 of your 5-a-day – one type of berry (e.g. blueberries, raspberries)
3 of your 5-a-day- mixed berries

  •  ¾ cup plant-based milk
  • ½ cup oats (gluten-free optional)
  • 1 small banana
  •  Toppings
    – 1 cup of pre-frozen berries
    – 1-2 tbsp nut butter or tahini

  1. Mash the banana and add it to a cereal bowl. Then add the oats and plant-based milk.
  2. Heat the mixture for 1 minute.
  3. While the oats are cooking pour out 1 cup of frozen mixed berries into a small bowl (or I usually just use a mug).
  4. Take out the banana porridge and stir it. then heat for another 30 seconds. Stir it again and heat for a final 30 seconds. Make sure to watch it so that it doesn’t overflow! If you see that it is getting too high in the bowl then take it out and give it a stir.
  5. Once the oats have finished cooking then microwave your berries for 1 minute, followed by another 30 seconds if they need it.
  6. Pour the berries and juice over your oats then drizzle on the nut butter.

You can add a table spoon of granola as well for an extra crunch
