I eat oatmeal (or ‘porridge’ as I say in the UK) at least 4 or 5 times a week and have been posting recipes on instagram regularly. But it’s been a while since I shared one of the blog. This bowl full of vanilla and beetroot oatmeal looked so pretty and pink that I decided it was the perfect one to share – especially since it is coming up to Valentine’s day Winking Face on Apple iOS 11.2Image result for pink heart emoji

What makes this pink oatmeal pink?

The pink colour comes from beetroot powder. I used a tub from Nutristrength that I was given to create this recipe, but I have tried other brands before and they are quite similar. I like beetroot powder because it has a strong colour, sweet taste and doesn’t have as much of an earthy taste as real beetroot. Also, you can also use it to make a beetroot latte!

Vanilla Beetroot Oatmeal for Valentines day

  • 1/2 cup oats
  • 1 cup unsweetened rice milk (or other plant-based milk e.g. almond)
  • 1/2 tsp beetroot powder
  • 1/2 scoop vanilla protein powder (approx. 15g)
  1. Add the oats and rice milk to a pan. Cook on medium until the texture is slightly runnier than you usually like your oats. This is usually about 3-4 minutes for me. (You can also cook them in the microwave according to the instructions on the packet, but be careful to watch them so that they don't boil over)

  2. Stir in the beetroot powder and protein powder. Continue to cook until it reaches your desired texture - usually about 1 minute for me.

  3. Pour the oats into a bowl and add your favourite toppings. I have used banana, berries and qnola puffs.

You can add extra sweetener, such as half an apple (grated). Plus, coconut works really well with beetroot, so I’d definitely recommend it as a topping.

You could use real beetroot for added flavour and a brilliant bright pink colour to your oatmeal.

If you’re not a fan of beetroot then you could use mashed raspberries instead to make pink porridge.

Or pimp up the raspberry oatmeal recipe with chia seeds and mint. Choose to leave the oats to soak overnight and eat them cold, or cook it as normal.

Finally, you can get creative with the toppings. BeLoved date hearts and strawberries make a very romantic topping! And did you spot those gingerbread men in the photo above?
