I am very aware that I don’t have a whole lot of savoury breakfast recipes or lunch options on the blog – what can I say? I love the sweet stuff like fruity smoothies, brownie batter cookie dough oatmeal and peanut butter & jelly on toast. But recently, I have been enjoying posh beans on toast and I want to share the recipe with you.
After a consultation with nutritionist Rhiannon Lambert, I have been trying to eat more savoury breakfasts. It was kind of tough for me to give-up my delicious oats and berries at first, but now I am more in the groove of having a less sugary breakfast half of the time. I really love avocado on toast and Rhiannon suggested that I increase the protein content to make it a more balanced meal by adding beans – I have used butter beans because they’re my favourite but you could use any. Also, I absolutely LOVE to add peas to my beans on toast, so they have made an appearance in this recipe as well. (Do you remember the Halloween monster toast I made using peas and avocado?)
Posh beans on toast recipe
3 of your 5-a-day
- 1-2 slices of bread (depending on how big they / how hungry you are)
- 1/2 cup butter beans
- 1/3 cup frozen peas
- 1/3 cup frozen sweetcorn
- 1/3 to 1/2 ripe avocado
- 1 tbsp. vegan pesto*
- Sprinkle of chilli flakes
- Pop your bread in the toaster and toast it to your liking.
- Put the beans, peas and sweetcorn in a pan and heat on medium for 4-5 minutes. Stir in the pesto and turn off the heat.
- Mash the avocado onto your toast and top with the posh beans.
Number 4 is ‘leave the pan to wash up later’, but that might not go down well in your house! Even with the time needed to wash the pan, this is a quick and easy recipe for posh beans on toast.
