“What’s the twist?” you ask.

Well, I decided to add pink grapefruit instead of orange to give it a little zesty kick.

I seem to be obsessed with ‘zesty’ flavours after the delicious lemon and cashew bliss balls  that I made last week. The risk to use grapefruit in the smoothie and the topping paid off. I loved it and usually I’m not a massive fan of grapefruit.

Also this smoothie is totally adaptable to your tastes. I used pre-mixed spice but you can add your favourites such as cinnamon, ginger and nutmeg. Plus you can add as little or as much grapefruit juice as you’d like. I started with only one tbsp. because I was a bit weary, but then I ended up having three tbsp. in the end! Also I started out with only one date but the smoothie transformed into something even more delicious when I added a second one!

Healthy carrot cake smoothie with cream cheese topping

Serves 1
4 of your 5-a-day

  • 1 large ripe banana (frozen)
  • 2 small carrots
  • 1 fresh grapefruit
  • 6 walnut halves (chopped)
  • 2 large dates
  • ½ cup cannellini beans
  • ½ cup oat milk
  • ½ tbsp mixed spice
  • 3 drops of vanilla essence
  • ½ cup yogurt (I used plain unsweetened soya)
  • 1/2 tsp light carob syrup or liquid sweetener of your choice

This smoothie tastes amazing with fresh ingredients. Walnuts can become rancid and bitter if they have been in your cupboard for too long and carrots can also become less sweet when they get older. If you really want to enjoy this smoothie I suggest you pop to the shop and buy some new ingredients.


  1. Peel the carrots (Usually I like to eat the carrot skin because it is full of goodness, but I think the smoothie turns out sweeter if you take off the skin) . Then chop one and grate the other.
  2. Squeeze the juice from half the grapefruit.
  3. Add the banana, chopped carrot, beans, dates, oat milk, spices, vanilla and 3 tbsp of grapefruit juice to your blender. Blend until totally smooth. Taste the mix and see if you want to add extra spices, dates or grapefruit juice. Add the extras and blend again until smooth.
  4. Next add in the grated carrot and walnuts. Pulse your blender a couple of times for 2-3 seconds. You want to combine the ingredients rather than make it smooth again.
  5. Transfer the smoothie into a glass.
  6. Mix together the yogurt, 2 tbsp of grapefruit juice and liquid sweetener and then layer it on top of the smoothie. (Confession, I didn’t do a good job at layering it to begin with and part of the topping sank into the smoothie so I had to add extra yogurt for the photo!).
  7. Top with extra spice, walnuts and grapefruit pulp.
  8. Find a little rabbit to enjoy it with.
