I had actually scheduled a different post for today, but then I found out it was NATIONAL ICECREAM DAY. So I decided to upload the recipe for my breakfast, which I posted on instagram : mango and nectarine nicecream (a.k.a. banana icecream).

I’ve called it a Sunshine Smoothie on account of the colour and the bits of pineapple kind of looking like rays of sun. Although I’m wondering if I should have called it ‘Mango Madness’ or something cheesy because the sweet taste of the mango really comes through.

Honestly, it’s mango heaven and the nectarine adds a unique twist. When paired with some crunchy granola it’s just perfect. Also I’ve sneaked a carrot into the recipe for extra nutrients!

I absolutely love to eat banana icecream in the morning. It really satisfies my sweet tooth and I find it very filling. That said, this smoothie would make a lovely snack or dessert- but I’d suggest this maked 2 servings worth on account of the higher calories.

Serves 1

Mango & Nectarine Icecream Recipe


  • 1 cup mango (frozen)
  • 1 large banana (frozen)
  • 1 juicy nectarine
  • 1 medium carrot (peeled)
  • 1/4 cup coconut water
  • 1/4 cup rice milk (or other plant based milk)
  • Toppings
    • 1/3 cup granola
      (I used Planet Organic – Tropical Paleo Granola)
    • 1/4 cup pineapple
    • a couple of pomegranate arils


  1. Blend all of the ingredients together. You might want to stop and scrape down the sides of the blender if it doesn’t seem to be mixing, or add more liquid.
  2. Transfer to a bowl and add your toppings!

Did you know….

Nectarines have smooth skin but peaches have fuzzy skin!

Disclaimer: I was sent the granola by planet organic, which I have also used in this fruity breakfast pot recipe. But I really love it and used it on my breakfast this morning without even intending to upload this recipe for you guys. Hopefully they will send me some more… hint hint wink wink!!
