These delicious zesty lemon energy balls will give you the perfect boost at any time of day.
I made them for my mum for Mother’s Day because she loves lemons and they went down a treat. Both of my parents said (several times!!) that these bliss balls were one of the nicest things that I’ve ever made and that they really enjoyed them.
These vegan energy balls have a good hit of zesty lemon without being sour. The dates add a touch of sweetness and the cashews help to make them nice and creamy.
It’s definitely worth going to the effort of making your own lemon bliss balls. Shop bought alternatives never taste as fresh because they use lemon essence or flavouring. Plus you will miss out on the nutritional benefits of the lemon. Lemons are best knwn for containing vitamin C, but they also contain vitamin B6, vitamin A, vitamin E, folate, niacin thiamin, riboflavin, pantothenic acid, copper, calcium, iron, magnesium, potassium, zinc, and phosphorus in varying quantities.
LEMON & CASHEW ENERGY BALL RECIPE

- 200g medjool dates
- 1 large organic unwaxed lemon
- 1 cup cashews
- 1 cup oats (gluten-free if needed)
- Pinch of pink Himalayan salt
- Pinch of vanilla powder
- Unsweetened coconut flakes or ground almonds (optional)
- Grate the zest from the whole lemon and squeeze out the lemon juice.
- Blitz the cashews and oats in your food processor for 10-20 seconds.
- Add in the medjool dates, salt, vanilla powder and half of the lemon zest and juice.
- Blitz the mixture until it starts to form a ball.
- Taste the mixture and add the rest of the lemon zest followed by the lemon juice if you would like a stronger flavour. Blitz until it forms a ball.
- Remove the ball and wrap it in cling film then place it in the fridge for 1-2 hours (or overnight).
- Once the mixture has chilled remove it from the fridge and roll it into balls. Top tip: Wet your hands first to avoid the mixture sticking.
- Optional: If you think that the balls are too sticky you can roll them in coconut flakes or ground almonds.
- Store the lemon energy balls in an airtight container in the fridge until you would like to eat them. If you want to transport 1-2 as a snack it would be best to put them in a tub so they don’t get squished.
